Today is Meal Plan Monday! As I was preparing my meal plan this week, it occurred to me that softball and t-ball games start next week which means on-the-go meals. I don’t know about your family but when we are running from one activity to the next preparing meals can become nearly impossible wand eating out is not only unhealthy but it is also very expensive!
I created today’s assignment to help avoid fast food and unhealthy meals.
Today’s assignment is to create a list of quick summer meals, a list of meals that you can make in your Crock Pot, and a list of freezer meals that you have prepared in your freezer (or that you can make to have in your freezer).
I have found it to be really easy that when I make a lasagna or barbecue meatballs to make an extra batch or two and place those in the freezer. I love having meals prepared for those crazy days and knowing that I have a solution to the meal time chaos.
After you have these meals written out, tape them inside one of your kitchen cupboards for easy access when you meal plan. Try to keep ingredients on hand for these quick meals so if you are in a bind, you can whip them out in just a few minutes. When I have the ingredients, I can easily make tacos in under 20 minutes. In 30 minutes I can make grilled hamburgers or spaghetti!
