The original recipe is made as a side dish. I double the recipe and use it as a main dish for our family. It’s delicious, filling and our entire family liked it! The recipe below is the original recipe.
Ingredients:
- 4 medium sized potatoes, peeled and sliced into rounds, divided
- 1/3 cup chopped onion (I used around 1/4 c. the first time I made this because my family doesn’t like to taste onion in our recipes)
- 3 teaspoons all-purpose flour, divided
- 1 teaspoon salt, divided
- 1/8 teaspoon pepper, divided
- 1 cup cooked and diced ham
- 1 tablespoon butter, cut into tiny pieces
- 1 2/3 cups whole milk
- 1 tablespoon cornstarch
- 1/2 cup sharp cheddar cheese, shredded
Directions:
- Grease your slow cooker with non-stick cooking spray
- Place half of the potatoes into the greased crock pot
- Sprinkle with onion, 1 1/2 teaspoon flour, 1/2 teaspoon salt, and 1/16 of pepper
- Add the rest of the potatoes to the slow cooker. Top potatoes with ham
- Sprinkle with the remaining flour, salt, and pepper. Then dot with the butter
- In a separate bowl, whisk together the whole milk and cornstarch. Pour the mixture down the side of the slow cooker so you don’t disturb the flour and seasonings
- Cover and cook on the low setting for 4-5 hours. Potatoes should be fork-tender.
- Sprinkle the cheese on top
- Cook on the high setting for 15-30 minutes, until the cheese is melted and the potatoes are tender. Serve
