I love making this breakfast casserole on the weekends for my family because it is easily adaptable to suit everyone’s tastes and is quick and easy to make.
Ingredients:
6 slices bread- toasted
1 lb sausage, browned (You can also use cooked bacon or cubed ham.)
9 eggs
2 1/2 c. milk
1/4 tsp. salt
2 cups grated cheese (I used Monterrey-Jack, but have also used cheddar)
**Other toppings that taste great in this casserole are mushrooms, peppers, onion, green chilies or jalapenos. If I add them to the casserole, I mix them in with the eggs!
Directions:
Preheat oven to 350º and grease a 9″ X 13″ pan. Toast the 6 pieces of bread and press them into the bottom of the 9″ X 13″ pan. (I sometimes have to tear the last piece to get it to fit into the pan.) Top with browned sausage.
Mix the eggs, salt, and milk together in a bowl and pour on top of the sausage and toast. Top with grated cheese.
Bake at 350º for 45 minutes or until eggs are fully cooked. I serve this casserole with salsa or hot sauce for a little extra kick. Enjoy!
I make something like this and use croutons for the bread. Then I leave out the spices and salt. I have not used sausage before and I think I will try that next time.
