Breakfast Grilled Cheese

Breakfast Grilled Cheese.  Eggs, Bacon, & Toast, what more could you want?  My husband said I can make it again tomorrow!

Breakfast at our house is a big deal.  With 5 kids and a farmer husband, everyone likes to eat breakfast and they all have their own opinions on what constitutes breakfast.  I have a husband who doesn’t eat cereal and would really prefer to eat pizza for breakfast every morning!  In order to satisfy his tastes, I took 3 things he would normally love to have for breakfast (eggs, bacon, and toast) and decided to make a grilled cheese with it.  This recipe would also work with ham, Canadian bacon, or sausage.  I tried my experiment on him yesterday and he really liked it.  Afterwards he said it reminded him of a Sonic Breakfast Toaster (which hadn’t occurred to me when I thought I was a genius at making this little concoction!!)  It was good though and the 2 kids I had try it, also liked it so I will start adding it to my menu plan.  This recipe makes approximately 2 sandwiches!

Ingredients:

4 pieces of bacon, cut in halves and cooked (either fry or bake)

4 slices of sandwich bread, (I used wheat)

3 eggs 

pepper, to taste

sliced or shredded cheese (I used shredded Marble Jack and it was tasty!)

butter or margarine

Directions:

Lightly butter your bread slices (one side only) as you would to make a regular grilled cheese sandwich.  Using a large frying pan or griddle on medium to medium-low heat (so you have time to make your eggs without the bread burning), lay each buttered side down, and begin to cook.  Add your cheese on 2 of the slices to melt as it cooks.grilled cheese1

In a small frying pan, melt 1 teaspoon of butter and fry your eggs.  My husband likes his eggs a little runny in the middle so that’s how I made these.  You could also scramble them if that’s your preference.  When eggs are fully cooked, add on top of the cheese (I used three eggs and divided the 3rd to fill up the two sandwiches).  Top with pre-cooked bacon slices and other slice of bread (buttered side to the outside) on the bacon.

Continue cooking on both sides bumping the heat up to medium heat until both sides are golden brown and the cheese is completely melted.
