It’s Day 13! Summer vacation is closer each day! It’s time to put a little of our past planning to use!
Today’s assignment is to make sure you have extra ingredients and meat thawed so tomorrow night you can make a double batch of a meal to put in the freezer! If you can I challenge you to triple the recipe because having 2 meals in the freezer is such a help during those busy summer days! If you are cooking tonight is there any way to make a double batch of your meal to also put that in the freezer? A little tip is each time I’ve cooked lately, I ask myself if I have enough ingredients to make a double batch and can freeze that meal. If I can, I do it. Soon you will have a nice little stash of freezer meals and not a lot of extra effort involved in making them!
One other tip is let the children help! Not only is it good for teaching life skills but it also gives them some pride in cooking and I’ve found that my pickier eaters like to eat the food that they’ve made!
I also would like you to take 10 minutes to look at your Summer Shopping List so you can start crossing a few things off your list this weekend either with a garage sale or by purchasing a few of the items on the list! Do you need to buy swimsuits, goggles, or any other pool items? If so, make sure you add to the list!
That’s it for today! I’d love to know what you are planning on making for your freezer meals! A few that I like to make and freeze well are enchiladas, lasagna, meatballs, and tater tot casserole!
